Here is what I have been able to produce on my own farm so far: vegetables, meat, and herbs. This is all that I can afford for now because I have not invested much money.

## Water Spinach

I transform ordinary water spinach into a beautiful and delicious vegetable. After slicing it into many pieces, I can use it in many recipes, making it more visually appealing and increasing the desire to eat it.  

Slicing water spinach by hand can be time-consuming, but thanks to artisanal tools, we now have a faster way to do it. You can purchase one of these tools at the Amazon link above.  

Water spinach shredded is commonly used in **Vietnamese, Chinese, Malaysian, Indonesian, Thai,** and **Cambodian** cuisine. It is also used in some **Indian** and **Sri Lankan** dishes.  

Here are some popular dishes made with shredded water spinach:

- **Vietnamese:** Rau muống xào tỏi (stir-fried water spinach with garlic), canh rau muống (water spinach soup), bún chả giò (vermicelli noodles with fried spring rolls and grilled pork), and gỏi cuốn (summer rolls)
- **Chinese:** Ong choy stir-fry, ong choy soup, and ong choy dumplings
Malaysian: Kangkung belacan (stir-fried water spinach with fermented shrimp paste), kangkung goreng (fried water spinach), and nasi lemak (rice cooked in coconut milk with various side dishes, including shredded water spinach)
- **Indonesian:** Tumis kangkung (stir-fried water spinach), kangkung terasi (water spinach with fermented shrimp paste), and gado-gado (Indonesian salad with peanut sauce, often including shredded water spinach)
- **Thai:** Pad kra pao moo (stir-fried basil with pork and shredded water spinach), pad kra pao gai (stir-fried basil with chicken and shredded water spinach), and tom yum goong (hot and sour shrimp soup, often including shredded water spinach)
- **Cambodian:** Lok lak (stir-fried beef with onions, garlic, and shredded water spinach), bai sach chrouk (grilled pork with rice and shredded water spinach), and khmer curry (Cambodian curry, often including shredded water spinach).  

Shredded water spinach is a versatile ingredient that can be used in a variety of dishes. It is a good source of vitamins A and C, as well as iron and calcium. It is also low in calories and fat.

To shred water spinach, simply remove the leaves from the stems and discard the stems. Then, stack the leaves and roll them up tightly. Use a sharp knife to shred the leaves into thin strips. You can also use a food processor with a shredding attachment.

Shredded water spinach can be used fresh, cooked, or frozen. To cook shredded water spinach, simply stir-fry it with a little oil and garlic until wilted. You can also add other ingredients to your stir-fry, such as meat, seafood, or tofu. Shredded water spinach can also be added to soups and stews.

If you are freezing shredded water spinach, blanch it first by boiling it for 1-2 minutes. Then, drain it and plunge it into ice water to stop the cooking process. Once it is cool, squeeze out any excess water and freeze it in an airtight container. Shredded water spinach can be frozen for up to 3 months.


## Chilli Pepper

I love <div style={{transform: "scaleX(1.85)", display: "inline-flex", margin: "0 3.5rem"}}>chili peppers</div>, and while buying them from a farm or supermarket is an easy and inexpensive way to get them, I want to grow my own chili peppers on my farm so that I can have them on the table whenever I want and use them to make my own chili pepper-based recipes.  

## Kumquat

Kumquat plants are a beloved New Year's tradition in our country, just like Christmas trees are in the West. While people often use them as New Year's decorations, I have found a way to use the kumquat fruit to make delicious and affordable food that I enjoy every day.  

I like to use Kumquat fruit to make vegetable salad with slicer Water spinach, peanut, chilli, meat, and more.  

Kumquat trees produce much more fruit than lemon trees, and I have adopted kumquats as an alternative to lemons. Kumquats are nearly free to grow, and there are many delicious recipes that include kumquats. I can introduce you to some of these recipes in the near future. Kumquat recipes are tasty, enjoyable, and free to get all year round.  

## Lemon

Lemon is a citrus fruit known for its bright yellow rind and tart, acidic juice. It is a versatile ingredient used in cuisines, cleaning products, and traditional remedies around the world.

Lemons are native to Southeast Asia, but have been cultivated in the Mediterranean region for centuries. They were introduced to the Americas by European colonists and are now grown in tropical and subtropical climates around the world.

Lemons are a good source of vitamin C and antioxidants. They are also low in calories and fat. Lemon juice is often used as a natural preservative and can also be used to clean and disinfect surfaces.

In many cultures, lemons are used to enhance the flavor of food and drinks. Lemon juice is a common ingredient in marinades, dressings, and sauces. It is also used to add brightness and acidity to soups, stews, and stir-fries. Lemon zest is the grated outer rind of the lemon and is used to add flavor to baked goods, desserts, and cocktails.

## Apple Snail

Apple snail meat is a popular food in many parts of the world, including Southeast Asia, Africa, and South America. It is also becoming more popular in other parts of the world, as people become more aware of its nutritional benefits and delicious taste.

Apple snail meat is a good source of protein, iron, calcium, and vitamin A. It is also low in fat and calories. The meat has a slightly chewy texture and a mild flavor that can be compared to chicken or fish.

Apple snail meat can be used in a variety of recipes, including soups, stews, stir-fries, and curries. It can also be grilled, baked, or fried.

## Lemon Leaf

Lemon leaves are the leaves of the lemon tree. They have a strong citrus aroma and flavor, and are used in many cuisines around the world, including Thai, Vietnamese, Indonesian, and Laotian cuisine.

Lemon leaves are typically not eaten whole, as they are too tough. However, they can be used in a variety of ways to add flavor to food.

Most of the case is to use young lemon leaves to slice and add to the facourite food and recipes.  

## Shiso

Shiso is a versatile herb that is widely used in East Asian food culture, particularly in Japan, Korea, and Vietnam. It has a unique flavor that is often described as a combination of anise, mint, and basil. Shiso can be eaten raw, cooked, pickled, or dried, and it is used in a variety of dishes like: Sushi and sashimi, Noodles, Soups, Meat and fish dishes, Salads, Pickles, and Tempura, much more.

In addition to its culinary uses, shiso is also used in traditional medicine in some cultures. It is said to have anti-inflammatory and antioxidant properties.

Shiso is a delicious and versatile herb that can be used to add flavor and freshness to a variety of dishes. It is a staple in East Asian food culture, and it is becoming increasingly popular in other cuisines around the world.


A combine with Lemon Leaf, Kumquat, Butterfly Pea, and Guava Leaf could make a good home drink If you still not know. Diferent from the western country, in Asia, lot of flower could be used for make drink at home, from natural and good health.

### Rosemary

Rosemary is a small to medium-sized shrub, growing to about 1.5m (5ft) tall after five to ten years, but it can be pruned to keep it much smaller. It can also be grown as a hedge. There are several varieties with different styles of growth, ranging from upright to trailing.  
 
Rosemary is drought-tolerant once established and needs little maintenance, apart from clipping annually to keep it compact and bushy. Left unpruned, it can become straggly and bare at the base. Even with regular trimming, it is often best to replace rosemary every five years or so with a new young plant, and luckily it’s very easy to grow from cuttings.

### Thailand Chilli Pepper

To successfully grow and harvest these small, prolific peppers you need to provide day time temperatures of 75 to 80 degrees F. and a lengthy gardening season of at least 100 days.

### Basil

Basil is not usually seeded directly into the soil; typically, gardeners transplant small starter plants purchased at a nursery. Or, they may start the seeds themselves indoors under grow lights.

Common or sweet basil, Ocimum basilicum, is the most common basil; other types include purple basil (less sweet than common basil), lemon basil (lemon flavor), and Thai basil (licorice flavor)

Basil will grow best in a location that gets 6 to 8 hours of full sun daily, though it can perform well in partial sun, too.

Soil should be moderately fertile and moist but well-draining. Basil works great in containers or raised beds, as these allow for better drainage. The pH of the soil should ideally be in the range of 6.0 to 7.5 (slightly acidic to neutral).

If you plan on cooking with these plants, plant in clean soil, don’t use insecticides, and grow them away from driveways and busy streets so exhaust won’t settle on the plants.

### Rare Black Tomato

You can plant tomatoes from seeds or seedlings. However, black tomatoes are often heirloom tomatoes and seedlings can be difficult to find at your local nursery or garden center. 

Growing black tomatoes is similar to growing any other type of tomato. Start by planting the seeds indoors 6-8 weeks before the last frost. Once the seedlings are a few inches tall, transplant them outdoors to a sunny spot with well-drained soil. Water the plants regularly, and fertilize them every few weeks. Black tomatoes will typically ripen in 70-80 days. 

### Mint

Mints are vigorous perennials that thrive in light soil with good drainage.  
Ideally, they prefer a moist but well-drained site, something like their native habitat along stream banks.  
Most will grow in sun or partial shade; the variegated types may require some protection from direct sun.  
For growing outdoors, plant one or two purchased plants (or one or two cuttings from a friend) about 2 feet apart in moist soil. One or two plants will easily cover the ground. Mint should grow to be 1 or 2 feet tall.  
Mint is a vigorous grower and needs to be contained, or it will send out its runners and spread all over your garden. The key is to contain the plant’s roots. Whether it’s in the ground or above ground, plant mint in a pot; we suggest each mint is planted in a 10-inch pot that has drainage holes. You can then sink this pot into the ground or another larger container of soil.  
If you are fine with mint becoming a ground cover and understand that it may become invasive, plant in its own raised bed or separate area.
In the garden, plant mint near cabbage and tomatoes--in pots, again, in order to prevent it from spreading and stealing nutrients from your crops!

## Potato

Potatoes top the list for vegetables to grow at home. Homegrown potatoes taste a world better than store-bought, they're easy to grow, and they're especially fun to harvest -- like digging for treasure!

## Fried Apple Snail meat

Apple Snail meat could be a very simple recipes, I deep-fried the apple snail meat in cooking oil for 5 minutes, or more until it was golden brown and crispy. I then prepared the dish with some sliced lemon leaves and chili peppers.  
Fried apple snail meat can be paired with noodles to enhance the flavor. This is the second recipe that I use to eat every day, besides fried apple snail meat with freshly cooked rice.

## Sliced Water Spinach Peanut Salad

This combination of water spinach, kumquat, chilli, lemon leaf and peanuts is most commonly found in Thai Binh, The Northen Vietnam, where both ingredients grow plentifully in the summer.

Prepare your "roadsted peanut", slice water spinach in half, or fours piece. Slice lemon leaf, chilli into very small well.

Make the Kumquat water, and combine with lemon leaf, chilli, add some of Hoisin sauce for flavor.

Finally is add everything together and mixing.

## Hu Tiu Kho Noodles

Hu Tiu noodle soup is the rebel of all Vietnamese noodle soups. There are no rules. You can add whatever delicious topping you want (chicken, pork, eggs, innards and/or seafood). You can have it with broth, without broth (dry) or with broth on the side. You can have it with rice noodles (Pho noodles), tapioca noodles (Hu Tiu noodles), egg noodles (Mi noodles) or any combination of them. It’s delicious chaos in a bowl.

Before we proceed, just a quick clarification. There’s a difference between Hu Tiu, the dish and Hu Tiu, the noodle. Having a bowl of Hu Tiu noodle soup doesn’t necessarily mean you will be served with Hu Tiu noodles. That was pretty confusing to me in the beginning so I wanted to clear that up. Moving on.

The broth in Hu Tiu noodle soup is made primarily from pork bones but chicken bones can also be used. Since there are so many variations in what makes up Hu Tieu noodle soup, a telltale sign of a version of Hu Tiu noodle soup (the dish, not the type of noodle) is the use of garlic chives. You see garlic chives? Bam, it’s Hu Tiu noodle soup for simplicity. 

For this particular version of Vietnamese Dry Pork & Seafood Noodle Soup, I use two types of noodles: Hu Tiu noodles, a chewy and clear noodle made from tapioca starch, and Mi noodles, a noodle made from eggs and wheat flour. The meaty toppings include sliced BBQ pork (Thit Xa Xiu), hard-boiled quail eggs, squid and shrimp. Since I’m having it dry, the noodle bowl comes with a generous dollop of a savory and sweet and soy-based tomato sauce. The bowl is topped with blanched garlic chives, bean sprouts, crispy fried shallots and garnished with green onions and a dash of black pepper.  For those who like it spicy, you can add a spoonful of chili garlic oil (sate sauce) and a some pickled jalapeno peppers. Mix everything together before shoving it in your face.

Serves 5-7

## Ingredients


### Stock

- 3 lbs pork bones (shoulder/neck/marrow/tail bones, can also use chicken bones)
- 3 liters water (about 12-1/2 cups)
- 1/4 dried shrimp (about 10 small shrimp, soak in warm water for 5 minutes, rinse and drain dry)
- 1 daikon (peel and cut into large chunks)
- 1 yellow onion (peel; leave whole)
- 1 tablespoon sea salt
- 1-1/2 tablespoons granulated sugar
- 1 tablespoon pork/chicken/mushroom stock powder
- 1/2 teaspoon MSG (optional)

### Noodles

- 1 package (1 lb/16 oz) fresh or dried tapioca noodles (Hu Tieu noodles; presoak if using dried noodles)
- 1 package ( 1 lb/16 oz) fresh or dried egg noodles (Mi noodles; presoak if using dried noodles))
- 2 tablespoons sesame oil

### Protein Toppings

- BBQ Pork (Xa Xiu)
- 10 hard-boiled quail eggs
- 10-15 large shrimp (size 21-15, peeled and deveined)
- 1 bag frozen already prepped and scored squid

### Vegetables/Garnish

- 1 bag bean sprouts (blanch)
- 1 bunch garlic chives (trim off ends, cut into 2 inch segments and blanch)
- Fried shallots
- Green onions (trim off end and slice thin)
- Fried pork fat
- Black pepper

### Tomato-Soy-Based Sauce

- 2 tablespoons vegetable oil
- 1 large shallot (peel and mince)
- 4 cloves garlic (peel and mince)
- 3 tablespoons oyster sauce
- 2 tablespoons soy sauce
- 5 tablespoons tomato sauce
- 5 tablespoons granulated sugar
- 1/4 teaspoon MSG (optional)
- 2 cups stock
- 1 tablespoon tapioca starch and 1 tablespoon corn starch dissolved in 4 tablespoons room temperature/cold water
- Chili garlic oil (sate sauce)


## Instructions


Clean pork/chicken bones by boiling the bones in a medium-size pot filled with water for 3-5 minutes. Remove bones, rinse under cold running water and drain dry.
Clean the pot that was used to parboil the bones thoroughly and return to stove. Add blanched bones, water (3 liters), dried shrimp, daikon and yellow onion. Bring pot to a low simmer and cook for 2 hours. Occasionally, use a ladle or strainer to remove any impurities/scrum that float to the surface to keep the stock clear.
In the meantime, cook the noodles. If you are using dried noodles, make sure to presoak them in cold water for 2-3 hours to become pliable. Blanch noodles in a rolling boil water for 30 second to 1 minute. Drain noodles into a colander placed in the sink, rinse with cold water and drain dry. Gently toss noodles with sesame oil (1 tablespoon for each type of noodles).  
Prepare the potein toppings and vegetables/garnish.  
To the stock pot, remove all the solids. Drop the raw shrimp and precooked squid directly into the stock to cook or to liven up for 1-2 minutes (make sure not to overcook). Use a strainer or slotted spoon to remove squid and shrimp. Set aside. Season stock with sea salt, sugar, stock powder and MSG.  
Make the tomato-soy-based sauce. In a medium-size sauce pan, add vegetable oil and heat on medium-high. Add shallots and garlic. Saute until fragrant (1-2 minutes). Add oyster sauce, soy sauce, tomatoe sauce, sugar, MSG, 2 cups stock and tapioca/corn starch slurry. Heat on medium until sauce thickens then set aside.  
To assemble, add egg noodles and tapioca noodles to a bowl. Top noodles with a few slices of BBQ pork (xa xiu), one or two hard-boiled quail eggs, 1-2 shrimp, 2-3 slices of squid, some bean sprouts and garlic chives. Garnish with fried shallots, green onions, fried pork fat and a dash of black pepper. Lastly, add a big dallop of the tomato-soy-based sauce to the bowl and serve with a small bowl of stock, garnished too with a bit of green onions and a dash of black pepper. Now enjoy!.

## Countryside Potato Soup Asian

The homemade Countryside Potato soup in Asian, use cooking oil to cook fresh and sliced potato in about 2-3 minutes, add water and cooking until 10 minutes then turn off, serve your with topping like BBQ Pork or beef, fresh sliced water spinach, sliced lemon leaf, chilli, and enjoy.

In my previous post, [[A Self Sufficient Garden]], I wrote about how I developed my own garden farm to produce apple snail meat as a low-cost and sustainable alternative to buying meat from the market. You may not find apple snail meat in your city, as I live in a different country, but I am developing many homemade recipes using this ingredient and I want to share them with you all. The taste is delicious, and I can eat these recipes with fresh rice, vegetables, and a drink, all at no cost.

## Drink recipes

Here are a few of the many natural recipes from Asia, especially Vietnam. All with zero sugar, fresh or dry natural recipes for drink healthy.<Footnote idName={1}>I'm living in Vietnam right now, while vegetable are the cheapest due to many supply, but meat are super expensive. ## Licorice a.k.a Liquorice

Many researchs has proof that Licorice good for health, and used for treatment and medicine as well over thousand of years.

The licorice drink recipes is simple, boiled water and put some of licorice and enjoy late with tasty sweet but zero sugar.

Licorice (Glycyrrhiza glabra) has been used in food and as medicine for thousands of years. Also known as "sweet root," licorice root contains a compound that is about 50 times sweeter than sugar. Licorice root has been used in both Eastern and Western medicine to treat a variety of illnesses ranging from the common cold to liver disease. It acts as a demulcent, a soothing, coating agent, and as an expectorant, meaning it helps get rid of phlegm. It is still used today for several conditions, although not all of its uses are supported by scientific evidence.

Licorice that has the active ingredient of glycyrrhiza can have serious side effects. Another type of licorice, called DGL or deglycyrrhizinated licorice, does not seem to have the same side effects and is sometimes used to treat peptic ulcers, canker sores, and reflux (GERD). Practitioners still sometimes suggest whole licorice for cough, asthma, and other breathing problems. Topical preparations are used for eczema and other skin problems.

That said, I no longer work as an illustrator. I spent four years working professionally in illustration (2015-2019) before moving into an art direction and product design role. I'm not a great source of advice on 'making it' as an illustrator, since that's not something I want to do.

You can indeed print any images you find here for your own personal use!

The image quality on the garden notes and twitter is low for printing (72dpi). But if you join my email list I send out high-quality, downloadable versions on there (300dpi – big enough to print on the side of a wall if you so desire).

I'm not fan of the carbon emissions involved in printing, storing, and shipping these from a central location. So if you want professional prints I suggest finding a local printer near you and sending them the high-res files.

### How would you describe your work?

I think about this too much, but I would shelve everything I do under the banner of **visual explanations**. This conveniently vague term includes everything from **illustrated notes and essays** to **interface design**.

What I don't make:

- **Comics** - Comics tell a narrative story over time. I mostly explain non-narrative topics and explore ideas atemporarily out of time. They share a lot of comic-like qualities though, and I've spent countless hours studying & stealing techniques from comic artists like [Will Eisner](https://en.wikipedia.org/wiki/Will_Eisner), [Nick Sousanis](http://spinweaveandcut.com/), and [Scott McCloud](http://scottmccloud.com/).
- **Infographics** - Infographics have [a particular aesthetic](https://www.pinterest.com/vectorstock/infographic-templates/) that makes my eyes bleed. While technically these do communicate information through graphics, the word _infographic_ comes with visual baggage. And I would like to run very, very far away from it.
- **Sketchnotes** - If we define 'sketchnotes' as true _sketches_ – unrefined, unplanned visual scribbles – my work doesn't fit.
  They're far more crafted and planned than stream-of-consciousness sketches drawn in one fell swoop.

Our web browsing experience hasn't changed much over the last three decades.

Here's Mosaic, the first browser that made the web popular outside niche academic circles. Built in 1993, its _"killer feature"_ was inline images.<Footnote idName={1}>As opposed to images you had to download and open in a separate window</Footnote>

On the surface, not much has changed. The layouts, icons, and button arrangement haven't moved. Address bar at the top. Arrow icons to move between pages. Access to the same basic controls; print, refresh, save, and search.

Modern Chrome certainly gained the veneer of minimalist modern design; we've reduced the interface to a low-contrast sea of whitespace. It's also vastly more powerful; 1993 Mosaic certainly couldn't load 20 tabs running WebGL animations.

But from a user's perspective, the core browsing experience isn't different. Enter URL, load the page, click on links, move forwards and backwards in browser history. We can only see one website at a time, or max two if we stack our browser windows in columns.

Chrome and Mosaic are not uniquely similar. All the major characters in this browser drama – Firefox, Safari, Opera, and Internet Explorer/Edge – feel like they're wearing the same outfit.

This historical consistency is impressive. Perhaps it means we nailed this interface pattern on the first try. Or perhaps it means building browsers is an enourmously complex challenge, and the only companies with enough engineering resources to dedicate towards it aren't interested in mucking about. They're too busy keeping up with W3C web standards and negotiating cross-compatability concerns, leaving little room for experimental interface patterns.

This isn't for lack of want though. There have been plenty of calls to _"reinvent"_ the browser. Places like [The Browser Company](https://thebrowser.company/) make a lot of noise about it (but we've yet to see a product demo). Foundations like Mozilla have funded extensive [experimental explorations](http://patrykadas.com/browser.html) of alternative browsers.

There's a steady stream of ideas and speculative sketches floating around Twitter that prompt us to reconsider our browsery assumptions and ask good design questions:

<h2 className="micro">The Pattern</h2>

There are some new apps appearing that offer alternative ways of browsing the web, but sidestep the problem of needing to build an entire browser.

Through the use of `<iframe>` embeds (or sometimes darker magic like live-updating screenshots in `<img>` tags), these apps are creating a form of web inception; allowing us to embed tiny browser windows inside a larger canvas. <Footnote idName={2}>This is a tricky as many websites deny access if they're embedded inside other webpages. This isn't out of malice; they're trying to protect themselves from cross-site scripting attacks</Footnote>

This canvas-based approach adds _spatial_ dimension to the web browsing experience; they allow us to arrange browser windows above, below, to the left, and right of other browser windows.

The same way we're able to put an open book next to a piece of paper and below a row of sticky notes in meatspace. Arranging objects in space to create groupings, indicate relationships, and build hierarchies is one of those classical human skills that never goes out of style.

#### Spatial Browsing Apps

1. [Kosmik](https://lithium.paris/) is a canvas-based note-taking app for iOS and Mac app that includes frames for web browsing. It's still in early development, but as a native app it doesn't seem to have the same cross-site blocking issues as web apps.

[Nette](https://www.nette.io/) is a browsing app designed for researchers that allows you to open multiple browser windows, draw physical connections between frames, pull out key concepts, and write markdown notes directly into your canvas. <Footnote idName={3}>Still pre-release but looking promising</Footnote>

3. [Sprout](https://sprout.place/) is designed with social interaction in mind – an open, multiplayer canvas where you can video/voice chat, write notes, and browse webpages together. It cleverly sidesteps the issue of cross-site blocking by using screenshots in `<img>` tags instead of true `<iframe>` elements.

4. [Natto.dev](https://natto.dev/) isn't designed to be a browsing or knowledge management app, but inadvertently implements this pattern. It's a spatial canvas for programming that happens to allow HTML elements, such as `<iframe>`:

All of these examples allow you to add different blocks and elements to your canvas other than simply browsers. This turns the interface into a true research space. You can add notes, images, and links connected to these browsers – pulling out information in order to arrange it in ways that make sense to you.

At least... in theory. The above platforms are promising, but they're all at beta/alpha stage for the moment. They're worth playing with, but not stable enough to build up an extensive database of notes and browser trails in.

We're so close though. Here's to hoping we have widely useable spatial browsing tools within the next year or two.

#### Postscript

I should touch on the impulse to bring in even more dimensions here. When you search for "_spatial web browsing_,” you'll find there are whole engineering teams trying to stick web browsers on [walls within 3D AR/VR](https://venturebeat.com/2021/05/13/spatial-unveils-web-browser-collaboration-in-3d-workspace-and-nft-virtual-galleries/) environments. To me this feels like putting the cart before the poorly rendered, nausea-inducing horse, given we haven't built tools to properly browse the web in 2D space yet.
